Sweet Potato Brownies

  • 300g sweet potato (raw, peeled)
  • 15g cocoa powder, highly de-oiled
  • 1tsp Stevia (liquid) or agave nectar (for those who like it a little sweeter)
  • 40g Go Superfood Protein
  • optional: 20g dark chocolate

Dice the sweet potato and cook for 30 minutes until soft.

Drain the cooking water and mix the diced sweet potatoes with a fork or a blender to a pulp.

Mix with the remaining ingredients to make the brownie dough.

Chop the dark chocolate into small pieces.

Spread the dough on a baking tray into a 3cm high square and spread the chopped chocolate on top.

Bake in the preheated oven for 20 minutes on the middle shelf and at 200 degrees top-bottom heat.

Bake for another 10 minutes on the top shelf.

Let the brownie block cool well on a grid and then cut into pieces.
